Σύμφωνα με κάποιο μύθο η «ανακάλυψη» του τυριού προκλήθηκε από ένα ευχάριστο ατύχημα. Η υφήλιος διένυε την 4η π.Χ. χιλιετηρίδα όταν ένας Άραβας έμπορος αποφάσισε να κουβαλήσει μαζί του, διασχίζοντας την έρημο, γάλα στο σακίδιό του. Τώρα για ποιο λόγο πίστεψε πως θα μπορούσε να αντέξει άθικτο το γάλα σε μιας μέρας ταξίδι στην έρημο, δεν θα το μάθουμε ποτέ. Σίγουρα όμως δεν πρέπει να παραπονιόμαστε, γιατί το δέρμα του σακιδίου από τη μία, η μεγάλη ζέστη από την άλλη, το γάλα «έκοψε», χωρίστηκε σε μία μαλακιά μάζα και σε έναν υπόλευκο υγρό. Τη νύχτα λοιπόν , ο έμπορος ήπιε το δροσιστικό χυμό και έφαγε τη νόστιμη μάζα. Έτσι γεννήθηκε το τυρί, μία τροφή που έμελλε να αγαπηθεί πολύ. Μία από τις αυθεντικές γεύσεις που μέχρι πριν λίγα χρόνια ήταν σχεδόν άγνωστο στους Έλληνες εκτός και αν ήταν Κώοι αποτελεί και η εμφάνιση ενός σπανιότατου ελληνικού τυριού, όπως το λεγόμενο «διαμάντι της Κω» ή αλλιώς Κρασοτύρι. Αναφέρεται πως το κρασοτύρι κατά το 300 π.Χ. διατηρούνταν σε λάδι για να συντηρείται. Την περίοδο όμως εκείνη υπήρξε πρόβλημα με την παραγωγή του λαδιού στο νησί αλλά παράλληλα και μεγάλη αύξηση στην παραγωγή του κρασιού με αποτέλεσμα η ανάγκη του ανθρώπου να μπορέσει να συντηρήσει το τυρί τον οδήγησε να προσπαθήσει να το ωριμάσει μέσα σε κρασί. Αφού το αποτέλεσμα αποδείχθηκε επιτυχές και τα χαρακτηριστικά του τυριού βελτιώθηκαν και σε γεύση και σε ποιότητα οι κάτοικοι συνέχισαν να παρασκευάζουν το τυρί από τότε με την συγκεκριμένη συνταγή η οποία έχει επικρατήσει ως τις μέρες μας. Η εταιρεία Γιάννου αποτελεί παράδοση στην παραγωγή του ντόπιου προϊόντος για 2 γενεές. Αρχικά, η οικογενειακή επιχείρηση ξεκίνησε το 1997 με την δημιουργία μία σύγχρονης μονάδας για την παραγωγή παστεριωμένου φρέσκου γάλακτος, γαλακτοκομικών προϊόντων καθώς και του συγκεκριμένου τυριού. Την συνέχιση της οικογενειακής παράδοσης ανέλαβε το 2002 ο μικρότερος γιος της οικογένειας δημιουργώντας την σημερινή ατομική επιχείρηση ΓΙΑΝΝΟΥ Ν. ΠΑΝΑΓΙΩΤΗΣ. Η σημερινή βιοτεχνία έχοντας καταβάλλει μεγάλη προσπάθεια κατάφερε το κρασοτύρι να συγκαταλέγεται ανάμεσα στα πιο περιζήτητα τυριά αλλά και να απολαμβάνει την εκτίμηση των κυνηγών των δυσεύρετων απολαύσεων. Ο ιδιοκτήτης κος Παναγιώτης Γιάννου επισημαίνει : «Μιλάμε για ένα τυρί που η ιδιόρρυθμή του εμφάνιση, «χτενισμένος», λεπτός χαλκοκόκκινος κύλινδρος, σφραγίζει την ξεχωριστή του ταυτότητα». Το κρασοτύρι ωριμάζει σε μία άλμη, εμπλουτισμένη με τις οινολάσπες κρασιού κατά προτίμηση ντόπιου και αποκτά μία κρούστα που το κρατάει σκληρό ακόμα και μέσα στη συσκευασία του. Γι’ αυτό με το που θα το μυρίσεις νιώθεις αμέσως ένα ευγενικό και έντονο οινικό άρωμα. Είναι χρονοβόρος διαδικασία, χρειάζονται πολλά χέρια και τυροβόλια, ειδικές θήκες που φτιάχνουν οι παραγωγοί από λεπτά βούρλα. Είναι από τα πλέον γευστικά εδέσματα, ειδικά με καρπούζι. Με εκτίμηση ΓΙΑΝΝΟΥ Ν. ΠΑΝΑΓΙΩΤΗΣ One fine taste which a few years ago was almost unknown to the vast majority of Greeks, unless they were residents of kos island, is the discovery of a very race cheese known as krassotyri or otherwise ¨the diamond of kos¨ . It is reported from different sources that krassotyri (winecheese) in 300 b.c. was preserved in oil. During that period, there was shortage in the oil production in kos and big increase in the wine production. As a result of this shortage and the necessity of the locals to preserve the cheese it was decided to preserve it in wine.This decision proved to be very successful as the characteristics of the cheese improved not only in taste but as well in quality and the locals decided to continue this new recipe till nowadays. The company which constitutes tradition in the production of krassotyri in kos is YIANNOY N. PANAGIOTIS.Initially, the family business started in 1997 with the creation of a modern unit for the production of pasteurized fresh milk, dairy products and krassotyri. The continuation of the family tradition undertook in 2002 the younger son of the family creating today’s company YIANNOY N. PANAGIOTIS. The current companyt with big effort accomplished krassotyri to be included between the finest and rare cheese but also to intrigue the world’s best hunters of hard to find enjoyments. The owner, Mr Panagiotis Giannoy points out:¨we are referring to a cheese that its special appearance, fine bronze roll, stamps it’s special fine indentity¨. Krassotyri (wine cheese) matures inside brine,enriched with the dregs of wine at preference local and it acquires a crust that keeps it hard even in his packing. This method redults in feeling immediately its gentle and intense wine sense.It’s a time consuming process, it needs a lot of help and special shearts called ¨tyroviola¨ that make the productioners from thinly(boyrla).
