Everyday our cheese plant treats only 100% Greek goat milk from local dairy farmers, which is controlled by collaborating laboratories on the recommendation of (fat, protein, SNF, blend with water in the presence of antibiotics, etc.), to ensure best quality of products. In 2007 the creamery was modernized in accordance with national and European standards. In this direction, equipped with the latest technology that contribute to a better and safer production, but does not deviate at all from the traditional methods of cheese production. - Creamery, cheese, in Samothraki. In Samothraki, a place with its own flora and full of goat herds, there is only one creamery. And has a new producer, Panagiotis Papanikolaou. All made from goat's milk on the island with natural yoghurt culture, and are available in their store in Alexandroupolis. "One reason that our cheese is special," he said, "is that animals salten daily and graze the highly diverse flora of Samothraki. Η υφήλιος διένυε την 4η π.Χ. χιλιετηρίδα όταν ένας Άραβας έμπορος αποφάσισε να κουβαλήσει μαζί του, διασχίζοντας την έρημο, γάλα στο σακίδιό του. Τώρα για ποιο λόγο πίστεψε πως θα μπορούσε να αντέξει άθικτο το γάλα σε μιας μέρας ταξίδι στην έρημο, δεν θα το μάθουμε ποτέ. Σίγουρα όμως δεν πρέπει να παραπονιόμαστε, γιατί το δέρμα του σακιδίου από τη μία, η μεγάλη ζέστη από την άλλη, το γάλα «έκοψε», χωρίστηκε σε μία μαλακιά μάζα και σε έναν υπόλευκο υγρό. Τη νύχτα λοιπόν , ο έμπορος ήπιε το δροσιστικό χυμό και έφαγε τη νόστιμη μάζα. Έτσι γεννήθηκε το τυρί, μία τροφή που έμελλε να αγαπηθεί πολύ. Μία από τις αυθεντικές γεύσεις που μέχρι πριν λίγα χρόνια ήταν σχεδόν άγνωστο στους Έλληνες εκτός και αν ήταν Κώοι αποτελεί και η εμφάνιση ενός σπανιότατου ελληνικού τυριού, όπως το λεγόμενο «διαμάντι της Κω» ή αλλιώς Κρασοτύρι. Αναφέρεται πως το κρασοτύρι κατά το 300 π.Χ. διατηρούνταν σε λάδι για να συντηρείται. Την περίοδο όμως εκείνη υπήρξε πρόβλημα με την παραγωγή του λαδιού στο νησί αλλά παράλληλα και μεγάλη αύξηση στην παραγωγή του κρασιού με αποτέλεσμα η ανάγκη του ανθρώπου να μπορέσει να συντηρήσει το τυρί τον οδήγησε να προσπαθήσει να το ωριμάσει μέσα σε κρασί. Αφού το αποτέλεσμα αποδείχθηκε επιτυχές και τα χαρακτηριστικά του τυριού βελτιώθηκαν και σε γεύση και σε ποιότητα οι κάτοικοι συνέχισαν να παρασκευάζουν το τυρί από τότε με την συγκεκριμένη συνταγή η οποία έχει επικρατήσει ως τις μέρες μας. Η εταιρεία Γιάννου αποτελεί παράδοση στην παραγωγή του ντόπιου προϊόντος για 2 γενεές. Αρχικά, η οικογενειακή επιχείρηση ξεκίνησε το 1997 με την δημιουργία μία σύγχρονης μονάδας για την παραγωγή παστεριωμένου φρέσκου γάλακτος, γαλακτοκομικών προϊόντων καθώς και του συγκεκριμένου τυριού. Την συνέχιση της οικογενειακής παράδοσης ανέλαβε το 2002 ο μικρότερος γιος της οικογένειας δημιουργώντας την σημερινή ατομική επιχείρηση ΓΙΑΝΝΟΥ Ν. ΠΑΝΑΓΙΩΤΗΣ. Η σημερινή βιοτεχνία έχοντας καταβάλλει μεγάλη προσπάθεια κατάφερε το κρασοτύρι να συγκαταλέγεται ανάμεσα στα πιο περιζήτητα τυριά αλλά και να απολαμβάνει την εκτίμηση των κυνηγών των δυσεύρετων απολαύσεων. Milk, cheese, feta cheese, yogurt and other dairy products are authentic part of the daily diet of a traditional Greek meal.
