The quantities available vary from year to year and depend on the weather conditions that will prevail and the honey that nature will provide effortlessly. We do not mix different types of honey, we do not spoil the quality of our honey to have quantity and we respect bees and nature. We do this for reasons of conscience and philosophy for life. OUR HONEY Eteokritos thyme honey is collected in the wider area of the Sitia Geopark. The dry-thermal climate and the endemic vegetation of the area produce one of nature's most precious gifts. Eteocretan honey "true Cretan", from ἐτεός, meaning "true + Cretan" got its name from the area where it is collected, since Eteocretans are considered the native-genuine Cretans. From their name, it can be concluded that the Eteocretans were descendants of the Minoans, i.e. the ancient inhabitants of Crete. After the invasion and occupation of Crete by the Dorians (around 1100 BC), the Eteocretans will leave the central area of the mega-island and take refuge in the eastern part (today's province of Sitia) centered on Praisos. The Eteocretans would continue to speak their language and maintain their identity until the late classical years, as evidenced by the epigraphic evidence we know. Famous are the inscriptions of Praisos in the "Eteocretian" - apparently Minoan - language, which has not yet been deciphered. The label of our honey is inspired by symbols and letters of such inscriptions of ancient Praissus. Our Thyme Honey Thyme honey is a category of honey that is found more often in the Greek islands and less in mainland Greece. Crete is famous for the aromatic thyme honey it produces and for the rich nutrients it offers. Especially in the eastern part of Crete, where rainfall is minimal and the climate is particularly dry, one of the most aromatic honeys in the world is produced. ETEOKRITO honey is exclusively thyme and is an example of such a thyme honey.
